These Tropical White Chocolate Chip Cookies are sure to have you dreaming of the islands!
I am so excited to be participating in my second Cookie Swap! This year I get to be a co-host too! My partner this year is Brandie from Home Cooking Memories. This recipe for Tropical White Chocolate Chip Cookies will have you sing ‘Mele Kalikimaka’ and dreaming of palms trees instead of Christmas trees!
I love the play on flavors in these cookies! The white chocolate, macadamia nuts, coconut and dried pineapple taste amazing together! It certainly reminds me of our time in Hawaii.
Make your own Tropical White Chocolate Chip Cookies
Ingredients:
2 1/2 cups all purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1/2 tsp vanilla extract
2/3 cup white chocolate chips
1 cup macadamia nuts, chopped
1/2 cup sweetened coconut flakes
1/2 cup finely diced dried pineapple
Directions:
- Preheat oven to 375 degrees. Line baking sheet with parchment paper.
- In a small bowl, combine flour, baking soda, and salt.
- In a large bowl, cream together butter, sugar and brown sugar until well combined. Beat in vanilla and egg until combined. Gradually beat in flour mixture and mix until smooth.
- Stir white chocolate chips, nuts, coconut and pineapple into cookie mixture by hand. Drop rounded teaspoonfuls onto prepared baking sheet. Bake 8-10 minutes or until golden brown on edges. Cool on baking sheet for five minutes and transfer to cooling rack to finish cooling.
