Red velvet seems to be a running theme this time of year so I thought I’d jump on the proverbial bandwagon and share these Red Velvet Cookies with you!  With only 3 ingredients, these cookies will be a go-to dessert for any holiday or occasion!

Red Velvet Cookies Recipe

I tried a couple of different recipes before I was able to come up with a combination that maintained the moist cake like cookie without drying it out.

Ingredients:

1 package Red Velvet Cake mix
2 eggs
1/2 cup canola oil

Directions:

  1. Preheat oven to 375 degrees.
  2. Mix together cake mix, eggs, and canola oil.
  3. Scoop 1 teaspoonful of cookie dough at a time onto cookie sheet.  Leave about 1 inch between each cookie.
  4. Bake for 8 minutes.

If you want to get fancy, I have a killer cream cheese frosting recipe.  The recipe is at the bottom of the post.  It’s really easy to make and has a rich flavor.

Or you can take the easy way out and just grab a can of cream cheese frosting from the store.  I won’t judge.  😉
