With St. Patrick’s Day just around the corner I’m obsessed with all things mint. Did you know you can make your homemade mint extract with just TWO ingredients? My favorite mint recipe is chocolate mint brownies, but sometimes I just want something easy. An affogato is as easy as it gets.
So what is an affogato? Basically it’s a (get this) – coffee float. No kidding! You add your favorite ice cream and your favorite coffee in a mug and call it an affogato. I made a salted caramel affogato last year and fell in love. This time I used mint chocolate chip ice cream. Just fill your cup up with ice cream. You will need more than you think. I went back and added more after I poured the coffee in.
Then pour over freshly brewed strong coffee or espresso. Serve immediately. You can top with whipped cream or serve with some biscotti. You can also mix this up anyway you like. Affogatos are great for desserts for a dinner party. People are so impressed by the name but they are quick and easy to make.

- Mint Chocolate Chip Ice Cream
- Strong brewed coffee or espresso
Instructions
