Lemon Oreo Ice Cream Cake

This Lemon Oreo Ice Cream Cake is light and refreshing which makes it the perfect summer dessert!

The town I grew up in had the most amazing ice cream place. They made a lemon ice cream that I have never found anywhere else. Every time we go back to my home town, I have to stop and get lemon ice cream. When they released Lemon Oreos a couple of years ago, I tasted just like that ice cream! I knew I needed to try and make my own ice cream but I have tried over and over with no luck. However, this ice cream cake tastes just like the original and brings the summer memories of the early 1990s flooding back.

This is a simple recipe. You only need 3 ingredients – lemon oreos, softened vanilla ice cream and melted butter.

Begin by making your lemon oreo cookie crust. Remove 10-12 oreos from the package of cookies and set aside for the topping. Use the food processor to pulverize the remaining oreos. Pour those cookie crumbles into a medium mixing bowl. Melt 1/4 cup of butter in the microwave. Add the butter to the cookies and stir until well mixed.

Grease the bottom of a 9×13 casserole dish.

Pour the cookie crumb and butter mixture into the casserole dish. Use your fingers to press the crust into place.

Next take the softened vanilla ice cream and add it on top of the cookie crust. Use a spatula to evenly spread the ice cream over the crust. I find that just driving from the grocery store to the house and leaving the ice cream out while preparing the crust is the perfect amount of time to allow the ice cream to soften. You do not want the ice cream to melt. If it melts it will not reset properly.

In a plastic baggie, crush up the remaining oreos to use as a topping. Spread evenly over the top of the ice cream layer.

Freeze overnight and enjoy!
