This Cinnamon Streusel Coffee Cake is light and fluffy with a rich streusel topping that is perfect for large group breakfasts!
We’ve been making this coffee cake since I was about 10 years old. This is based on the Bisquick recipe but we’ve added to it over the years to intensify the flavor. The key to this coffee cake is the streusel topping and we ALWAYS double it! My dad makes the absolute best but I’ve gotten pretty good at it over the years. My son requests it at least once a month!
Tips to Making Streusel Topping
- Take butter out of the refrigerator the night before so it is softened and at room temperature. It makes mixing together with the brown sugar and Bisquick much easier.
- Use a fork to mix. You want this to remain crumbly and using a spoon or spatula tends to clump huge pieces together.
- Once it appears uniformly mixed with no Bisquick residue, it is ready. Stop mixing now or again, you will get big clumps.
Putting together the Bisquick Cinnamon Streusel Coffee Cake
Pre-heat the oven to 375 degrees. Begin by putting together the streusel topping. Using a medium mixing bowl, combine your Bisquick, brown sugar, cinnamon and butter. Follow the above steps to getting the streusel perfect. Once you have combined the streusel ingredients, set aside to make your coffee cake.
In a large mixing bowl, mix together Bisquick, sugar, egg and milk. Hand mix with a wooden spoon until smooth. Add three shakes of cinnamon to the batter and add 1 tsp vanilla extract for added flavor. Mix again until well combined.
Bake for 18-20 minutes at 375 degrees. Cool on a wire rack. Cut and serve once cool. Enjoy!

Ingredients
Cinnamon Streusel Topping
- ⅔ cup Bisquick
- ⅔ cup brown sugar
- 1 tsp cinnamon
- ½ cup butter
Coffee Cake
- 2 cups Bisquick
- ⅔ cup milk
- 2 tbsp sugar
- 1 egg
- 3 shakes cinnamon
- 1 tsp vanilla extract
Instructions

Pre-heat oven to 375 degrees. Grease 9 inch round pan.

In a medium bowl, mix together streusel ingredients until crumbly. Set aside.

In a large bowl, mix Bisquick, sugar, milk and egg until well blended.

Add three shakes of cinnamon and 1 tsp vanilla to batter. Mix together until well blended.

Pour coffee cake batter into greased pan.

Sprinkle top of batter with the cinnamon streusel.

Bake 18-20 minutes or until golden brown.
