We’ve been making this coffee cake since I was about 10 years old. This is based on the Bisquick recipe but we’ve added to it over the years to intensify the flavor. The key to this coffee cake is the streusel topping and we ALWAYS double it! My dad makes the absolute best but I’ve gotten pretty good at it over the years. My son requests it at least once a month!

Tips to Making Streusel Topping

1. Take butter out of the refrigerator the night before so it is softened and at room temperature. It makes mixing together with the brown sugar and Bisquick much easier.
2. Use a fork to mix. You want this to remain crumbly and using a spoon or spatula tends to clump huge pieces together.
3. Once it appears uniformly mixed with no Bisquick residue, it is ready. Stop mixing now or again, you will get big clumps.

Putting together the Bisquick Cinnamon Streusel Coffee Cake

Pre-heat the oven to 375 degrees. Begin by putting together the streusel topping. Using a medium mixing bowl, combine your Bisquick, brown sugar, cinnamon and butter. Follow the above steps to getting the streusel perfect. Once you have combined the streusel ingredients, set aside to make your coffee cake.

In a large mixing bowl, mix together Bisquick, sugar, egg and milk. Hand mix with a wooden spoon until smooth. Add three shakes of cinnamon to the batter and add 1 tsp vanilla extract for added flavor. Mix again until well combined.

Bake for 18-20 minutes at 375 degrees. Cool on a wire rack. Cut and serve once cool. Enjoy!

Did you know that National Donut Day is the first Friday of June?  What a wonderful day!  These delightful confectionery marvels are one of my favorite foods.  My favorite is old fashioned but I’m not prejudiced.  I’ll eat any donut (as long as it’s not filled).  Of course, as I’m writing this post, I’m back on the wagon and donuts are not allowed.  But I can live vicariously through my eyes.  Pretty sure I gained 20 pounds just writing this post!

Spring always makes me think of brunches.  Between Easter, Mother’s Day, bridal showers, etc, it seems like there is always something to celebrate!  What do you think of when someone mentions brunch?  I picture a Stepford Wife in floral dress sipping on a mimosa in a beautifully decorated living room that looks like it is straight out of the latest Pottery Barn catalog.  I don’t know about you, but that is not really my thing.  Honestly, a good brunch consists of a balance of savory and sweet foods and great beverages.  Add in some simple decorations for a little ambiance.  You don’t have to go overboard to throw a great party.  Here’s How to Host a Knock Out Brunch that won’t make you want to punch somebody.

Bite size anything is the current trend!  People like miniaturized finger foods.  They look cute and provide a small individual serving size.  Plus they are easy to store if there are leftovers!

Another fun option is to set up a self serve bar of some sort!  I’ve been to parties where they have self serve potato bars or waffle bars.  It’s another wonderful idea and kind of helps cater to your entire crowd.

Mini Quiches

I love recipes that allow you to cater to various tastes and likes. You can add whatever filling your family or friends prefer.  

For this recipe, we used bacon, spinach, and shredded cheese. But think outside the box! You can use green peppers, onions and ham for a Denver omelet style mini quiche.  

Or add a southwestern flare with some chilies and salsa. The possibilities are endless.

Ingredients for Mini Quiches

• 3 eggs
• 1 block of cream cheese
• 1 cup of shredded cheese
• Bacon
• Spinach
• Green onion
• Garlic salt
• Salt and pepper
• 1 can of Pillsbury Country Style Biscuits

The 3 eggs to 1 block of cream cheese ratio will yield 12 mini quiches made in a standard muffin pan.

1. Preheat oven to 350 degrees.
2. Begin by mixing eggs and cream cheese together.
3. Add in one cup of shredded cheese.  
4. Once eggs, cream cheese and shredded cheese are mixed together, add in your preference items.  Again, for this post we used bacon, spinach, and green onion.  Set aside.
5. Spray muffin pan with nonstick spray.  
6. Open can of biscuits and flatten biscuit in your hand and then place one inside each muffin cup.
7.  Add your egg mixture to each muffin cup.  
8. Bake at 350 degrees for 25 minutes.

These can be served hot out of the oven. Or you can refrigerate and warm up in the microwave the next morning. It takes about 25 seconds in the microwave and they are perfect!

These are bound to be your new go to breakfast!!  I’m going to start making these on Sundays to take to work through out the week!

I love reading all of the recipes you submit each month!  Jennifer Myers submitted this breakfast casserole recipe and we had to try it!  My husband loves chorizo and I knew this would be a hit!  Breakfast casseroles are great because you can whip this up the night before and just warm up in the morning!  Plus it’s a great way to get rid of leftovers in the fridge!  With Easter coming up, I thought this was the perfect theme for March!  

I did take add some green peppers and onions because I needed to use them and they really added to the overall Mexican flavor of the dish!  You could easily leave them out or if you’re really ambitious add jalapeños!

The flaky biscuit layer was awesome and took away from the egg-y taste.  My husband doesn’t like eggs but he loved this!  The chorizo was a fun twist instead of using plain old breakfast sausage.  And of course, we couldn’t skimp on the cheese!  The Mexican cheese blend shredded cheese was the perfect final touch!

Chorizo Breakfast Casserole

Ingredients

• 5 eggs + almost 1/4 cup of milk
• 2 cans of Grands Jr biscuits 5 per can
• Johnsonville Chorizo casing removed
• Veggies optional
• 1 cup Mexican blend shredded cheese

Instructions

• Preheat oven to 400 degrees.
• In a square glass baking dish arrange biscuits in 3 rows. Bake these for 9-10 minutes, until tops start to brown. (Do not overcook because it will dry out the casserole!)
• Saute onions and green peppers. (This step is optional)
• Brown chorizo in non stick skillet, continuously crumbling the meat with a spatula. (This takes about 6 minutes.) Remove to a paper towel-lined bowl to drain off excess fat.
• In medium mixing bowl, combine eggs and milk and whisk together. Add the sauteed veggies into the egg mixture.
• Next add chorizo in an even layer over the top of the biscuits. Then pour the egg mixture over the sausage and biscuit layer. Finally, top all with an even layer of Mexican cheese and replace in the oven for another 14 minutes or until cheese is bubbly and melted.
• Last (and this depends on your oven), when time is up, I leave casserole in oven and turn off the heat. This allows the eggs to set without burning the cheese topping. It usually amounts to another 5-7 minutes warm rest time.
• Serve warm!

I love breakfast casserole!  Breakfast casserole was an initiation morning tradition in my sorority.  Every time I make one, I think back to those mornings with my sorority sisters!

Whether you prefer savory or sweet, these one dish recipes make getting up a little easier!  Breakfast casseroles can be personalized to your specific taste or theme!  You can add some marinara, mushroom and spinach for an Italian themed brunch.  Or throw on some salsa verde, chilis and chorizo to bring out a Southwestern flare!  The possibilities are endless!

It’s also a great idea for potlucks!  You can make one dish that will feed a lot of people!  At my office, we host a potluck at least once a month and breakfast casserole is always a crowd favorite!

Bacon and Cream Cheese Stuffed Biscuit Bites

I love appetizers! I love them so much that I usually fill up on them before the main dish. One of my closest friends gave me this recipe and I know you will love it too!  

I am about to blow your mind with how easy these are to make!

Ingredients:

• 1 can of Pillsbury Flaky Layers Biscuits
• 2 eight ounce cream cheese
• 2 cups shredded cheddar cheese
• 2 packages of real bacon bits

How to Make Bacon and Cream Cheese Stuffed Biscuit Bites

1. Combine cream cheese, cheddar cheese and bacon.

2. Separate biscuit layers.  Line mini muffin pan with biscuit layers.

3. Fill each pastry lined cup with cheese mixture.

4. Bake at 375 degrees for 12-15 minutes or until golden brown.

Could those BE any easier?  Not to mention, they are super delicious! I’ve tried it with real bacon but it is too salty.  The real bacon bits are just the right balance of bacon and salt.

Hello Create. Craft. Love!  My name is Camille and you can usually find me over on my blog, Growing Up Gabel.  For the next few months, though,  I’ll be right here the second Thursday of every month sharing a delicious and easy new recipe.  Since it’s now September I thought I’d jump right in with an easy and delicious apple recipe.

This recipe is actually from my 1st grade teacher.  I have an old copy that was mimeographed that has survived the years since 1st grade.  I grew up on the western side of Michigan and my class went on a field trip to the apple orchard.  When we got back to school, we made fritters with the apples we  picked.  Every time I taste these, it brings me back to that classroom.

 Start by mixing up the dough.  It’s really easy to make and is pretty thick and tacky.   Mix it up and set it aside.   I cut up the apples last so the don’t get too brown.

You will want to core, peel and then dice up 2 small to medium sized apples. I used granny smith but galas or any other apple will work as well.  I use an apple peeler and corer to make the process easier.  It takes up very little room in my cabinets and gets a lot of use in the fall every year.  This handy gadget takes about 5 seconds to peel, core and slice your apples!

See? Pretty nifty, eh? If you like to bake or cook with apples, it’s worth getting one!

 Mix the diced apples in to the dough and then fry in butter in a frying pan.  You want to use butter – not oil – for the flavor.  I use a 3 Tablespoon cookie scoop to measure the dough and get about 6 fritters out of 1 batch.

You can sprinkle them with a little powdered sugar or make an icing for the top but they are just as good plain.  These are perfect snacks for a chilly afternoon or weekend treat.

Easy Apple Fritter Recipe

Ingredients

• 1 cup flour
• 1/8 teaspoon salt
• 1 teaspoon sugar
• 1 teaspoon baking soda
• 1 egg
• 1/3 cup milk
• 1 Tablespoon melted butter
• 2 small - medium apples

Instructions

• In a large bowl whisk together flour, salt, sugar and baking soda. Set aside.
• In a small bowl whisk together egg, milk, and melted butter. Add wet ingredients to the dry ingredients and mix with a wooden spoon until a dough forms. Set aside.
• Core, peel and finely chop the apples. Mix the apples in to the dough.
• Heat a large frying pan on medium high heat. When the pan is hot add 1 Tablespoon of butter.
• When butter is melted, drop scoops of the dough on to the pan. Spread the batter out a little bit so the fritter is a bit flat. Cook on one side for about 5 minutes. Flip over and continue to cook until the dough around the edges is cooked and the fritter is cooked through. This will take between 5-10 additional minutes - just be sure not to burn them.
• Serve immediately with powdered sugar, icing, or plain.
