My garden is growing by leaps and bounds! We actually have strawberries this year! They aren’t very big yet but I’m hoping that by this time next year, that little berry patch of mine with be providing me with all of the strawberry desserts I love! In the meantime, I will have to continue to buy from the grocery store. (sigh) One of my favorite strawberry desserts is strawberry shortcake. I know. So predictable, right? But seriously, it’s been a fave of mine since childhood. What I don’t love is the store bought shortcakes. My friend, Marjorie, and I were just talking about this the other day! They always turn out to be so dry. She shared her secret with me and that’s why I know you are going to LOVE this Strawberry Shortcake Shortcut!
I tried this for the first time over the weekend and HOLY YUM! Why didn’t I think of this before?! This takes my strawberry shortcake game to a whole new level!
Two ingredient strawberry shortcake! Strawberries and Twinkies! I don’t know why I never thought of this before! It’s absolutely genius! Twinkies always have the perfect consistency. The whip cream filling saves you from having to buy an extra ingredient!
I do a little prep with the strawberries. I begin by cut off all the green leafy tops. Then I place them in a tupperware container and add enough sugar to coat them. Place a lid over your sugared strawberries and shake it up good to be sure all of them are coated. Chill in the refrigerator for 2 hours. This allows them enough time to create their own juice.
Once they are juicy, upwrap a Twinkie and add some of the strawberries. I promise you, you will be in heaven. And if you really want, you can totally add a little extra whip cream. (wink wink)
