Soft Pretzel Bites

Everyone's favorite snack paired with our cheddar mustard sauce!

Ingredients

  • 1.75 cups warm water
  • 1 cup bread flour
  • 4 cups all purpose flour
  • 1 pkg active dry yeast
  • 2.5 tbsp brown sugar
  • 1 stick butter melted
  • 3 tsp kosher salt
  • 100 gms sodium carbonate
  • 1 liter water

Instructions

  1. In a stand mixer bowl, place warm water.  Empty yeast packet into the bowl and mix with a spoon.

  2. Mix in sugar and butter, let stand for 5 minutes to allow yeast to activate.

  3. Using a dough hook on low speed add in the flour and salt.

  4. Increase the mixer speed and knead the dough until it is uniform and pulling away from the bowl.

  5. Remove the dough from the mixer and knead into a ball.

  6. Lightly oil a bowl with vegetable oil, place the dough ball inside the bowl and cover with plastic wrap

  7. Allow dough to rise for about an hour

  8. Pre-heat oven to 425 degrees.

  9. Place the dough on a flat surface, divide into manageable portions and roll out into a long rope.  Cut into 1 inch bites.

  10. Bring the liter of water to a boil and carefully mix in the sodium carbonate.  If you are using a larger pot, you can scale this up to 1:1 to maintain a 10% solution.

  11. Spray baking sheet.  In batches, boil the dough bites for about a minute and place on baking sheet.  Sprinkle with salt.

  12. Bake for 15-18 minutes until brown.
