Bacon & Green Onion Twice Baked Potatoes

Ingredients

  • 3 medium green onions
  • 3 slices bacon
  • ¾ cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 large Idaho potatoes

Instructions

  1. Pre-heat oven to 350 degrees. Pierce potatoes with a fork and bake until soft (about an hour). Remove from oven and increase heat to 450 degrees.

  2. While the potato is baking, cook bacon and cut green onions.

  3. Let cool slightly. Slice potatoes lengthwise. Scoop out center of potatoes and place filling in a medium bowl. Reserve hollowed out potato skins.

  4. Add sour cream and cheese. Season liberally with salt and pepper.

  5. Add bacon. Mash potato mixture until creamy and bacon evenly distributed.

  6. Add green onions and mix with fork until just combined.

  7. Scoop 1/2 potato mixture back into each skin. Place potatoes on a non-stick baking sheet and cook 8 additional minutes.
