These Thin Mints Cookies taste just like the real thing!
Today, I’ve teamed up with a bunch of bloggy friends to bring you a virtual Cookie Exchange! I don’t know about you, but I use to dread the thought of the cookie exchange each year. Seriously, a dozen cookies per person? If you make cut out cookies and ice them, that could take a LONG time. Thankfully, my dad had a recipe for these DIY Thin Mint Cookies that is super quick and always a big hit!
This Thin Mint Cookie recipe is GREAT for kids! Lots of stirring and dipping (and tasting)! And since it hardly takes any time, they won’t get bored.
Make your own Thin Mint Cookies
Ingredients:
Ritz Crackers
Almond Bark (Milk Chocolate)
Peppermint Extract
(The chocolate to peppermint extract ratio is eight ounces to 1 tsp. {Each block of chocolate is two ounces – 4 blocks = 8 oz.})
- Place your chocolate in a microwave safe bowl. Cook on high for 90 seconds. Stir. Continue to melting in 15 second increments until the chocolate is the right consistency. I have found that 90 seconds is plenty.
- Once the chocolate is melted, add the peppermint extract and stir until well blended.
- Lay out some wax paper and begin dipping your crackers into the chocolate peppermint mixture. {I use the cute snowflake Ritz Crackers so they look festive!}
- Let the excess chocolate drip off and then place on the wax paper for the chocolate to harden.
Let dry for about 15 – 20 minutes.
Each 8 ounces of melted chocolate covers about 3/4 of a sleeve of crackers (about two and a half dozen). I can usually whip through the whole box in under an hour.
Tip: Don’t use the broken crackers. They get the chocolate all lumpy and then they won’t look as pretty.
