I am always looking for something sweet and easy to pack a treat into the kids lunches or keep around for the occasional sweet tooth attack I have. This little dessert was so simple to put together, and makes use of the delicious fall-themed candy melts that have recently hit the shelves! I know you are going to love these Fall Sweet Treats!
1 Package big marshmallows
1 Package vanilla double stuffed sandwich cookies
1 Package Ginger Snaps
1 Package Graham Crackers
1 Package lollipop sticks
1 Package Caramel Apple flavored candy melts
1 Package Pumpkin Spice flavored candy melts
2 tsp shortening (optional)
Start by melting your candy melts according to package directions. I add one tsp of shortening to the melts while they’re hot & stir vigorously – it makes them smoother and easier to dip items. These flavors are newly out this year and HOLY MOLY did they get me excited!
Use a food processor or similar to crush graham crackers and ginger snaps into crumbs – size is really up to your preference.
Insert one lollipop stick into each of those fatty marshmallows.
Inserting the sticks into the cookies is a teeny bit trickier, but doable. Find the part where the frosting is the fattest, and move slowly. You don’t want to feel the cookie pieces split apart from one another – if that happens, toss it aside and start with a new cookie.
Dip and gently shake off excess candy coating. While coating is still wet, sprinkle with your choice of cookie crumbs. We did both flavors of candy with both flavors of crumbs and loved them ALL! I have a 9×13 rectangle of styrofoam that I push the lollipop sticks into while the candy hardens.
Because I live in North Texas, and it’s hot and humid as all get out – I store these in my fridge. They should be eaten within 3-5 days for best flavor. Enjoy!
