I’m kind of on a “dipped” kick lately! My Glitter Dipped Easter Eggs actually inspired this post! {If you missed them, you can check them out here!} I wanted to make something for Reed to take to daycare for his St. Patrick’s Day party. But honestly, I have been so horrifically busy lately that I did not have the time and/or energy to spend tons of time in the kitchen. And I hate icing sugar cookies because I want them to really look good, ya know? That’s when I took the lazy mom way out and created these Icing Dipped Shamrock Cookies!
Wanna make your own Icing Dipped Shamrock Cookies?
Here’s what you need:
Pillsbury Refrigerated Sugar Cookie Dough
Cookie cutters/cookie sheet
Icing recipe/food coloring
Sprinkles
Once again, I enlisted Reed’s help. {I gotta tell you I love that he is old enough to help with things now!} Following the baking directions on the Pillsbury Refrigerated Sugar Cookie Dough, I rolled and cut four dozen mini shamrocks. After they finished baking, I made my favorite homemade icing recipe {you can find that here along with my Best Rolled Sugar Cookie Dough recipe.} I melted the icing with the microwave for 20 seconds in a microwave safe bowl. I poured the sprinkles in a separate bowl. Then I started dipping the corners of the shamrocks in the icing and then rolling them in the sprinkles. Let them dry for about thirty minutes. Done.
How simple is that? The Icing Dipped Shamrock Cookies are bite size too which means less icing, less calories for all of you watching your waist lines!
And they look super cute!
